  • That is SO good to know! I started my love affair with food by baking these delicious but GOD ugly cakes that just *somehow* got better over time and I didn't know why. But knowing this about the humidity explains a lot... San Francisco is a cupcake's dream! :)
  • A quick note here: table sugar is only mildly hygroscopic. Brown sugar, honey, and others are much more so. Depending on the content of the baked good, you will have a better chance pulling moisture into your tasty treat.
