One secret to The Food Geek is that I have a team of about 3000 test readers that I can send each article to. They are monitored by cameras and connected to various biometric devices, including a device that watches their eyes and tells me what they are reading at any given time. This allows me to make any edits to my articles, as well as put in the footnotes such as the one that caught you.
I know, it ruins some of the magic of the site, me telling you this, but I feel that it's important for people to understand how things *really* work.
